Here are a few things we saw this morning...
we watched bunnies playing among the rocks.....
lots of bunnies.....and of course with the bunnies, comes the predators...this little kestral wasn't looking for bunnies though..they are as big as he is!.
after the walk, we usually come home to breakfast..this morning, I made Oatmeal Sunflower Raisin muffins...
Yummy! and a healthy breakfast..full of good stuff, so tasty...
here is the recipe...
Oatmeal Raisin Sunflower Seed Muffins
1 c. flour
1 c. uncooked old fashioned oatmeal
1/2 c. packed brown sugar (I used Splenda)
2 1/2 t. baking powder
1/2 t. salt
1/2 c. milk
1 egg, slightly beaten
2 T. melted butter or margarine, cooled
2 T. vegetable oil
1.t. vanilla
3/4 c. raisins
1/2 c. sunflower seeds
Preheat oven to 400. Grease muffin pan...this makes 9 regular muffins or 6 jumbos..In a large bowl, mix dry ingredients, flour, oatmeal, sugaar, baking powder, salt...in another bowl, mix the liquid together well, milk, oil, butter and vanilla. Make a well in the dry ingredients and add the wet..stir just to combine..then stir in the raisins and seeds. Spoon into the prepared pan and bake for 18 to 20 minutes..cool on a wire rack..these muffins freeze well......
I love bunny pictures! Our local bunnies are still laying low. Have a great day!

First thing I noticed was the beautiful rainbow!!!! Just breath taking!
ReplyDeleteAnd I enjoyed walking with you. You know, the first thing I noticed when we moved to Florida was there are NO ROCKS! I miss rocks. Can't wait to make the muffins! Thank you for that, Dani!
Love the bunnies! My dogs would be going nuts to get those bunnies. They keep most of them out of our yard. There are those occasional renegades that know the dogs can't get through the fence! lol
ReplyDeleteGlad you are enjoying your walks!

Yumm~ those muffins sound wonderful Dani.
ReplyDeleteI love the picture of the kestral... we don't see those around here. We have Cooper hawks, which are small and probably similar to the kestral in that they hunt rabbits and rats and mice, but we also have huge red-tailed hawks, which will carry a chicken off in a heartbeat. Even though I don't like them for that fact alone, I can't help but be fascinated by them. They are truly amazing and beautiful creatures.
You got to see some special gifts on your walk!
ReplyDeleteNow I'm hungry for a snack (muffin time).
I love the great pictures you took! Seeing nature up close is so wonderful!
ReplyDeletelove love love the kestral picture - one of my favorite raptor birds. Muffins sound delish and glad you are out and enjoying the beauty of nature all around you - and sharing it with us!
ReplyDeleteI like the bunny pics....bunnies are so cute. Still a little cool here in Tennessee but it won't be long and we will have little bunnies running around in the backyard.
